I am roasting a duck for the first time. With broccolini and sliced garlic, cranberry sauce, gravy, apple pie, three kinds of icecream, and fudge sauce.
I am thankful for everything about my life but most of all for my girl Millie! Who is asleep on my stomach right now!
I just picked up ingredients for Thanksgiving for One (with leftovers of course!). Turkey breast, stuffing, cranberry sauce, refrigerator crescent rolls and I hope to get a pumpkin pie together. Last year, on Thanksgiving weekend, my appendix started to explode and then I lost my job right after returning to work. Here’s hoping this year I won’t lose my appendix again!!!! (I’m pretty positive that my job is safe.) Lots to be thankful for this year.
I’m about to marinate my tofu for chicken-fried tofu with mushroom gravy, then I’ll whip up some green bean casserole and mashed potatoes later. Big day of candymaking will happen in between now and dinner!
Happy Thanksgiving, everyone! I got out of work early yesterady, baked apple pie yesterday afternoon (noticed I say “baked” and not “made” 😉 ). Bringing it to my aunt and uncle’s for dessert; my aunt said I have to bring home any leftovers (a sacrifice I am willing to make). Drinking hot cocoa and then will get in the shower and get dressed, go pick up my parents (or maybe just my mom…don’t know how my dad is feeling, but I’m driving either way) and head to dinner (they’re about an hour away). There will only be 10 of us this year. Holidays are getting smaller.
Thankful for my family, not so much for the headache I woke up with. Hopefully the ibuprofen will kick in before I have to get on the road.

It will be a quiet Thanksgiving for us. My husband waiting for a kidney transplant, one dog battling cancer, and another one sick with respiratory problems, most likely due to the fires. I’m just happy we are all together this holiday season.
