Not this kind. These are macaron, the almond flour cookies that are devilishly hard to make. Ask me how I know. Macaroons are the coconut covered cookies that are easier to make. Both are delicious, in their different ways, if you’re a coconutaholic like me.
And macaroni is something else again!

I’ll happily devour both kinds! Macarons are so hard to make, there’s a special technique for mixing the battle called macaronage. The weather has to be just right and everything–humidity is their enemy.

I don’t know if they’re still available but Trader Joe’s had chocolate ice cream sandwiches made with oversized macarons as the cookie part. Totally drool worthy.
